Ingredients
  

  • 900 g frozen pre-cooked clams (2 x 450g packs)
  • 1 tbsp butter
  • 2-3 cloves garlic finely chopped
  • 60 ml (¼ cup) dry white wine Use a crisp white wine like Sauvignon Blanc, Pinot Grigio, or any dry white cooking wine.
  • 1/2 pcs lime juiced
  • salt to taste
  • black pepper to taste
  • 1 tsp flour (optional) Use to slightly thicken the sauce if desired.
  • Tabasco or other hot sauce (optional) For a spicy kick

Instructions
 

  • Sauté Aromatics:
    In a large pan over medium heat, melt the butter. Add the thinly sliced garlic and chopped parsley. Sauté until fragrant (about 1–2 minutes), being careful not to brown the garlic.
  • Deglaze with Wine:
    Pour in the white wine and let it simmer for 1–2 minutes to reduce slightly and cook off the alcohol.
  • Add the Clams:
    Add the pre-cooked clams to the pan. Stir gently and cover. Let them steam and release their natural juices for about 3–5 minutes. Make sure they are all opened. If any clams remain unopened after cooking, it is not recommended to eat them.
  • Season & Finish:
    Uncover, season with salt, pepper, and a splash of lime juice. If needed, sprinkle in a bit of flour and stir to slightly thicken the sauce.
  • Add Spice (Optional):
    Add a few drops of Tabasco or your favorite hot sauce to taste.
  • Serve Hot:
    Serve immediately in a bowl with the sauce. Pair with crusty bread for dipping or serve over pasta for a heartier meal.
