Ingredients
  

For the Bread:

  • 3-4 tbsp olive oil extra virgin for drizzling before toasting
  • 300-350 gr 1-1.5 baguette sliced into ~30–35 pieces

For the Avocado-Tomato Salad:

  • 3 pcs ripe avocados peeled, pitted, and cubed
  • 10-12 pcs cherry tomatoes (or 2 medium regular tomatoes, but I love cherry tomatoes) finely diced
  • 1 pcs small red onion finely chopped (optional, adds crunch and sharpness)
  • 1 small bunch fresh basil finely chopped
  • 1 pcs lemon juiced adds freshness and prevents browning
  • salt to taste
  • black pepper to taste

For the Shrimp:

  • 30-35 pcs medium shrimps peeled and deveined
  • 1.5 tbsp butter for pan searing
  • 2-3 gloves garlic finely minced
  • 1 small bunch parsley chopped
  • salt to taste
  • black pepper to taste
  • (optional) Chili flakes or Tabasco for heat

Instructions
 

  • Preheat oven to 180°C (350°F).
  • Slice the baguette into approximately 30–35 even pieces and arrange them on a baking tray lined with parchment paper.
  • Drizzle olive oil lightly over each slice.
  • Toast in the oven for about 10–12 minutes, or until the bread is golden and crispy. Set aside to cool slightly.
  • In a bowl, scoop the avocado flesh and mash gently with a fork.
  • Add diced tomatoes, finely chopped red onion (if using), lemon juice, chopped basil, salt, and pepper. Mix until well combined.
  • In a skillet, melt butter over medium heat. Add minced garlic and sauté until fragrant (about 30 seconds).
  • Add shrimp to the skillet, season with salt and pepper, and cook for 2–3 minutes per side, until pink and opaque
  • Add chopped parsley to the pan and stir to coat the shrimp. Remove from heat.
  • Assemble the toasts by spreading a generous layer of avocado mixture on each slice of toasted bread.
  • Top each toast with 1 or 2 cooked shrimp.
  • Optional: Add a dash of Tabasco or your favorite hot sauce for an extra kick.
  • Serve immediately while warm and enjoy!
